I'm trying to gauge interest in something less about fandoms and shows and more about the attendees and their (potential) dreams.

Would there be interest in something like this?  Are there panels like this already offered?

Artist Alley Table 101.

This sounds like a good panel, feel free to suggest it when panel suggestions open up.
