Here are a few of my favorites that haven't been mentioned so far:

Blue Drop   (though you only get that with the last volume of the Japanese DVDs)
Aoi Hana     (and if you like this, look into the one for Yokohama Kaidashi Kikou)
The songs from K-On! are fun.

and this season, the OP from Sora no Woto has quite grabbed me.

:3 I agree with most of the video games mentioned <3 But i'd have to add Lufia II: Rise of the Sinistrals, Breath of Fire (old school SNES ones), Secret and Legend of Mana. There are probably more but i've played so many games to where I can't keep track anymore 8D Old school ftw!^__~

I'll have to agree with the Lufia games and the Breath of Fire games.
Some other ones I like are as follows:

Berserk
Tenjho Tenge
Hellsing
FF IV
FF VI
Super Metroid
Castlevania: Symphony of the Night
Brandish
Ys (all of 'em!)
Valkyrie Profile
Star Ocean: The Second Story

There are too many more...I could go on for hours! :D
Barrell rolls are for LOSERS!

Well....here's my list so far of the best I have
Magic Knight Rayearth Song book (out of print, don't ask how I managed to get it, I got it in Texas at Animagix, a store)
Hellsing (Black dog, Raid, Ruin)
Weiss Kreuz OST (I have all the musical soundtracks and on the hunt for the Radio dramas so I can transcribe them for an American version)
Code Geass
Over Fiend (I used the soundtrack on Halloween some years back, lol...)
Trinity Blood (I don't own it, but myfriends do, T_T, I want it)
Vampire Princess Miyu TV
 Rurouni Kenshin OST 2
Devil Hunter Yoko (still mad that it was one of my CDs that got stolen.)
FFVII (My friends chipped in money to buy this sound track some years back, I turned Sephiroth's theme into one of my friend's ring tone)

I really like all the Cardcaptor Sakura soundtracks (not just because I'm a fan of the series  ;)) also Ah! My Goddess has some good music if you like something up beat, and I have to admit the FFX soundtrack sold me on Final Fantasy music, and I have to give kudos to the Kingdom Hearts soundracks as well (two things I love rolled in to one, you can't go wrong).  I also agree that Magic Knight Rayearth is good as well as some of the Sailor Moon stuff.
Don't diss the mouse! He may look like a pipsqueek but he does carry a keyblade and who knows, he may have Maleficent at his beck and call.

Dare I say the Rock Band an Guitar hero series? I think thats a given anyways though.

I definitely would like to add castle crashers to this list though, can't believe i forgot about it. I never really cared about the NewGrounds Audio Portal until that game came out... and speaking of portals, I was just reminded of VALVE! No joke though, my post was going to end there.

ANYWAYS: Pretty much all Valve games have amazing soundtracks, especially the Half Life series.

I think all the major nintendo games have great soundtracks. Who does'nt know the underground mario song? or the song that plays when link enters a bright sunny field? Also i like the metroid prime soundtrack, it created a great ambience for the game.

Anything by Yoko Kanno for anime soundtracks, everything she does has it's own amazing flavor that's pefectly tailored to whatever is on the screen. My personal favorite of hers is the soundtrack for Macross Plus. It amazes me how many anime nuts don't know that series. The music is to die for.

As for games... that's a long list.

Metal Gear Solid 2&3. Harry Gregson Williams has referred to Snake's theme as his opus.

Halo - all three games have tons of amazing music.

Anything by Nobuo Uematsu. Final Fantasy VIII is probably my favorite of his. While the game isn't my fave FF game, it tops my chart for soundtracks, some of the pieces bring me close to tears because you can feel the emotion in the music
Planned cosplays for 2012:
Big Boss (Metal Gear Solid: Snake Eater), Black Waltz 3 (Final Fantasy IX), Nappa (Dragonball Z), The Stig's Spartan cousin (Halo/Top Gear mashup)

Kingdom hearts has an amazing soundtrack! I love the song dearly beloved! It's got a melancholic yet sweet sound to it. Truly beautiful! I like to listen to the cd when doing homework or when I go to sleep! ^^

Metal Gear Solid(even though there wasn't much choice in music)1 and 2, Final Fantasy 7-10, and Lunar 1 and 2.

Anime wise, I agree with Haruhi, but also wanna put down Full Metal Alchemist, Bleach, Sailor Moon, Bubblegum Crisis, and .hack(roots and sign).

Legend of Zelda has the best video game soundtrack in my opinion, its all orchestrated, conducted by the one and only Koji Kondo. From its 8-bit glory to nowadays. Nothing can compete with it (in my opinion)

I love the music of the MGS series, the Final fantasy series, Sailor Moon, The World Ends With You, FLCL, Cowboy Bebop, Sakura Taisen, Bleach, Hetalia (catchy and silly) and the Pokemon series (2BA master is THE best dub anime soundtrack ever) I love a lot of music from games and anime as you can see, these are the main ones I love.

Lunara-
Props on the Dragoon soundtrack, I also love it game/music!

Greg-
I gotta go find the Haibane soundtrack now, but your right, the music is good.

As for my own suggestions, well any of the Star Ocean game soundtracks I like, and any of the Wild Arms series if your up for music with a westerny flare.

With anime?  Armitage the Third Polymatrix is really nice, Dual Matrix is also good to.  And I just got finished listening to Neo Ranga vol. 1 &2 which are good.  Oh and Key the Metal Idol, love the anime and I enjoyed the music very much.
